This is the first time I have done a post like this so do let me know if you like it and would enjoy me doing more.
For the recipe you will need the following:
It serves two as a main, four as a starter and it can be made at lightning speed (20 mins maximum).
So lets crack on, taking one large onion
1.Dice the onion into small chunks
2.Pour black truffle oil in a frying pan and heat on the hob on a low setting.
3.Add the diced onion to the frying pan.
4.Whilst the onion is cooking, dice 80 grams of chorizo.
5.Add the chorizo to the onion in the frying pan.
6.Dice 80 grams of pancetta.
7.Add the pancetta to the pan. Cooking all three ingredients on a gentle heat for three to four minutes (or until browned).
Now if you are short of time you can speed up the process by buying pre-diced Chorizo and Pancetta. When I have time I prefer to do it myself using chorizo sausages rather than the thin slices.
As the ingredients cook the chorizo and truffle oil gives off a wonderful aroma, but be prepared it will fill the room/flat/house. The chorizo will release a wonderful orange oil too.
8.When heated through remove the onion, chorizo and pancetta into a bowl and set aside.
Make sure you leave the wonderful juices that are left in the frying pan.
9.Taking the scallops from the fridge pat dry with a paper towel before you fry them.
If serving as a starter one scallop per person is sufficient if using king scallops. You also have the option to halve them in two. As a main guests will need two king scallops or four halved scallops.
10.Add the scallops to the frying pan.
Cook for two minutes either side this is for king scallops. Thinner scallops will take less cooking time. At this point do not get distracted, otherwise the scallops will be overcooked and chewy.
11.When cooked add the onion, chorizo and pancetta to the frying pan so the scallops soak up all the wonderful flavour. Only cook for 2 minutes max.
12.Whilst all ingredients are cooking, get two plates and add the salad leaves.
13.Dress the salad with the onion, chorizo and
pancetta.
14.Finally plate the scallops.
You can pretend to all your guest you have been slaving over a hot stove and after all that hard work you need to sit down with good company and devour. Of course someone else needs to do the washing up too.
For those of you amongst us who love spice you can add chilli to the above recipe with the onion, chorizo and pancetta.

I love scallops but I've never cooked them, I don't get much opportunity to cook meat or fish as my husband is vegetarian, but this is so going on the list for when he's away! x

DeleteI love spice, so I would definitely be adding chili to this recipe. I really love this series. You should keep it going. I also like the recipe on the notebook picture. I think it adds a nice touch and sets you apart really well.

I don't think I've ever seen king scallops here - ours are fairly regular sized and do not have that orange thing-y attached. Regardless, I adore scallops! Please do more!
